Broccoli Dip
This simple dip is light and delicious. It also makes a lovely appetizing sauce over pasta and baked potatoes. I like to top the sauce with a handful of grated mature cheddar cheese.

Instructions
  1. Heat the coconut oil in a large sauce pan over a medium heat.
  2. Add the broccoli florets and lightly season with salt and pepper.
  3. Stir fry for 4-5 minutes.
  4. Add the vegetable stock and bring to the boil.
  5. Cover and simmer over a low heat for 4-5 minutes until broccoli is tender.
  6. Remove from the heat and let it cool.
  7. Process in a blender until smooth.
  8. Transfer the dip into a bowl and stir in the lemon zest and lemon juice.
  9. Taste and adjust the seasoning.
Recipe Notes

Serve with carrot sticks, tortillas or whatever you prefer. This dip keeps well in the fridge for up to two days.
