Instructions
  1. Heat the oil in a non-stick frying pan. Add the onion and sauté over a medium heat until soft and lightly golden. Sprinkle over the crushed garlic and turmeric and cook for 30-40 seconds. Then add the spinach and cook over a high heat for 3-4 minutes until wilted. Remove from the heat and let cool.
  2. Place the spinach and yogurt in a food processor and whiz for a few seconds until roughly smooth.
  3. Transfer into a bowl. Mix in the mayonnaise and lemon juice. Season to taste. Cover and refrigerate. If using walnuts, stir them in just before serving.
