Waldorf Salad with Pecan Nuts
This effortless salad goes well with most dishes and keeps well in the fridge for up to 1 day.
For the dressing
or light Crème fraîche
or mixed spice (either is optional)
Salt and Pepper
For the salad
Granny Smith Apples
unpeeled, cored and chopped into small cubes
washed, trimmed and finely chopped
peeled and sliced into very fine cubes
broken into small pieces
First make the dressing. In a small bowl, mix the yogurt or light crème fraîche with mayonnaise, cream and cinnamon or mixed spice.
In a large bowl, combine the salad ingredients. Then pour the dressing over and mix well. Season with salt and pepper to taste.
